DESCRIPTION
The Maipo Valley produces the best Cabernet Sauvignon in Chile. The Andes Mountains and the Maipo River's influence, the fact that its waters provide high levels of calcium, and the cool breezes that come down from the mountain favour maturation. The stony soils of river sediments, volcanic ash, clays and other elements facilitate drainage, generating the conditions for this unique terroir in Chile.
Grapes from the Maipo Valley are characterized by their freshness and concentration. The cool and humid spring, and the stable temperatures and scarce frosts throughout the mild summer, allow for slow maturation. The harvest is by hand for grapes with a perfect pH and acidity, which are first fermented for three weeks in stainless steel tanks and then aged in French and American oak barrels that provide the toasty and spiced notes, unique character, and complexity of the wine.
TASTING NOTE
Colour: Deep and vibrant ruby red.
Aroma: Pronounced aromas of vanilla, blackcurrant, black cherry, sour cherry, green bell pepper and herbaceous notes of mint and eucalyptus.
Palate: Medium to high acidity and tannins result in a long finish, excellent wine suitable for ageing.
Gastronomy: It is ideal to accompany red meats, pasta, and cheeses.
